I just love the colour of beetroot, so vibrant, so lush. One of my work colleagues had a bright red soup for lunch & I was amazed... she said it was Beetroot & cauliflower soup. I had never herd of beetroot and cauliflower soup but just the thought of it, well.... my mouth was watering. Long story short that night I had my beets , a small cauli & a pot at the ready... and it was that good I just have to share!
RECIPE-
4 large beetroots peeled and diced
1/2 small cauliflower diced
1 red onion sliced
1 carrot sliced
3 garlic cloves finely sliced
1tbs Garamasala
1 tsp Bone Broth (I use Nutra Organics)
2 cups water
1 can coconut cream
Place all (except coconut cream) in a pot, simmer on low for 45 minutes. Stab mix or use a blender to create a thick smooth soup.
Return back to the heat and stir in coconut cream. Serve with crusty bread.
